The days when I don't really feel like cooking up something big I usually end up making stir fry. They are so easy and especially if you already have everything prepared. Today I just put together some pre-cut veggies, pork pieces and some wok sauce in a pan and there was my dinner. So easy and I didn't even have to use a cutting bord.

Snack
Today I decided to buy some strawberries because the weather is so beautiful and you should probably make sure to buy some local ones before it's too late. So my snack today was a bowl of strawberries and a cup of hot chocolate. I truly enjoyed it.

Yesterday 28-09-2011
Yesterday I was not feeling very well so I was in no state to cook anything. For lunch I only had leftovers and for dinner I actually ordered sushi. Sushi is definitely one of the things that I like the most. They are my biggest cheat food. I love it and I almost eat it once a week or sometimes more.

Spaghetti with bacon and brussel sprouts
Tonight I felt like skipping the gluten and dairy free diet and make something that's one of my favourite midweek meals. It's a really simple dish and even though it does contain both milk, flour and pasta it's quite healty.
Spaghetti with bacon and brussel sprouts
250 g wholegrain spaghetti
200 g diced bacon
1 shallot (I used two since I like onions)
400 g brussel sprouts
1 tbsp flour
2 dl milk
Pepper
Tomatoes
Clean the brussel sprouts and boil them for about 10-15 minutes. Boil the spaghetti according to the timeline stated on the package. Chop the onion and fry them together with the bacon on medium heat until the bacon is a bit crispy. Sprinkle the flour and add the milk. Let it simmer for a couple of minutes.
Cut the cooked brussel sprouts in halfs and add them to the pan. Season with some pepper and mix together. Serve with pasta and tomato.

Gluten and dairy free cupcakes
Today I felt like baking something and I found a recipe of cupcakes that had neither dairy, flour or sugar. However, I modified the recipe a little by making an icing since I thought that a cupcake without sugar will just be too boring.
Raspberry, almond and coconut cupcakes
(makes approx. 12 cupcakes depending on the size of the cups)
1 cup almond butter
1 cup sliced raw almonds
1 cup coconut milk
2 cups shredded coconut
3 eggs
Butter (preferably from grass fed cows)
Raspberries
Mix all the ingredients together except for the raspberries. Melt some butter and use it to grease the cupcake trays. Put the mixture in the cups and add couple of raspberries in each cup. Put the trays in the oven on 200 degrees for 15-20 minutes. Remove and transfer to a wire rack to cool.

Bacon wrapped fish with mexican rice
I got tonight's recipe from Tasteline.se. To compensate the rice I used two thirds of a cauliflower head and I also had some leftover rice from last night so I used the rest of that as well.

White fish filets
Black peper
Salt
Garam masala
Bacon strips
Grated cheese
Mix the spices together and put them on the top of the fish. Put the pieces of fish on top of 4 pieces of bacon, put some grated cheese on top of the fish and wrap the bacon around the fish. Place the wrapped fish pieces in an ovensafe greased dish and put in a 200 degrees hot oven for about 20 minutes.

Garlic
Chili
Cauliflower, grated (+ left-over rice)
Crushed tomatoes
Taco seasoning
Fry the onion, capsicum, chili and garlic in oil for a couple of minutes. Add the cauliflower and after a minute or so also the crushed tomatoes together with a splash of water. Also add the taco seasoning and let it simmer for 5-10 minutes depending on how much water was added. It should have a similar texture to a risotto.

Soy marinated chicken drumsticks with an asian omelette
Soy marinated chicken drumsticks with an asian omelette
Marinade for the drumsticks
Wheat free soy sauce
Sesame oil
Sunflower oil
Chili powder
Paprika powder
Garlic powder
Brush the chicken drumsticks with the marinade. Put them in the oven on 180 degrees Celsius for about 30 minutes. Take them out, turn them and give them another brush after approx half the time.
Omelette
2 free range eggs
Chili powder
Garlic powder
Wheat free soy sauce
Pre-cut asian vegetables (i.e. paksoi, red onion, chinese cabbage, bean sprouts and sugar snap peas)
Whisk the eggs, the spices and the soy sauce together. Add the veggies to a hot pan and fry for a few minutes. Put the veggies aside. Add the egg mix to a low-medium hot pan. When the eggs are almost set at the top, add the vegetables, fold the omelette in half and fry for a couple of minutes. Turn the omelette over and fry until ready.

This is a shy attempt for a food blog. My vision is to inspire not only you but also myself to cook tasty yet healthy food. I try to not eat that much wheat or other carbs such as potatoes, pasta and rice; therefore I try to complement these by cooking with as much vegetables and meat as possible. I started cutting down on the carbs a few months back and I've felt that I both lost weight and I also feel better in general.
I want to learn more about food and cooking and I hope I will be more disciplined to actually learn and practice by creating this blog.
